Amalfitano stunned the Old Trafford crowd with a sensational opener as the Baggies ran out 2-1 winners in the Premier League clash.
The 29-year-old joined the club on loan from Marseille at the start of the season and has two goals in his first three starts for the club.
Full-back Jones believes Amalfitano is a welcome addition at The Hawthorns, with an ability to work his way around any defence.
"He is great," Jones told the Express and Star. "You can give him the ball with someone tight to him and he can deal with that.
"And he is a master at wriggling out of awkward situations, which he proved a number of times on Saturday when it looked like he might have taken one touch too many and got tackled.
"He always seems to get away from a player.
"But it's not only that. From a defensive point of view he really works hard, putting pressure on the full-back and tracking back. I am enjoying playing with him and I think any right-back in this league would enjoy playing with him."
The 26-year-old right-back has been at West Brom since 2011 but insists Saturday's victory is a match he will never forget.
"It's got to be up there among the most memorable matches I have ever played in," he added.
"But it was well-deserved. Even though we haven't had the best of starts we believed in ourselves and that was the message from the gaffer.
"He told us to believe we could beat one of these top-four teams, so we're delighted."
Jones also paid tribute to striker Saido Berahino, who continued his dream start to first-team life with his first Premier League goal sealing three points for the Baggies.
"He will always score goals," added Jones. "He isn't naturally a wideman but he has adapted his game to get into the team out wide and he has played really well there.
"You could see that he believes in himself and he showed what a great player and a great finisher he is."
